Smoked Black Peppercorns

White peppercorns are black peppercorns that have had the black skin removed, they are just the seed of the fruit. They add a delicate, peppery warmth that builds to a zesty taste with each bite.
These young green berries, from the flowering vine plant, Piper Nigrium, are uniquely fruity with a subtle heat. Green peppercorns are really unripe black peppercorns and are a mild table pepper with a delightfully crisp flavor.
Pink peppercorns are not a true peppercorn (genus Piper), but are the ripe berries of the Brazilian pepper tree. They are used as a spice and have are sweet and spicy with a bright citrus aroma. They pair well with seafood and in light sauces.
Not an actual pepper, but the dried berry from the Chinese prickly ash bush. Dry-roasting these berries will bring out their best flavor. Roast berries for 3-4 minutes over medium heat. After they cool, grind and use as needed. Great for stir fries, grilling and roasting. Try on chicken, fish, beef and veggies.
Grown in Tellicherry, India, these peppercorns are considered to be the “Cadillac”. They are left on the vine longer to develop a wonderful rich flavor. Freshly ground Tellicherry pepper is a great addition to salads, seafood, chicken, steak or pork – any food on which you would use regular pepper!
